Greek Souvlaki

Make traditional Greek souvlaki with this recipe, featuring marinated grilled meat skewers served with pita, tzatziki, and fresh veggies. A delicious Mediterranean meal.

Ingredients
  

  • 500 grams pork shoulder cut into bite-sized cubes
  • 2 tbsp extra-virgin olive oil
  • 1 lemon zested and juiced, plus extra to serve
  • 1 tbsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 garlic cloves crushed
  • 2 heads Little Gem lettuce shredded
  • 1 red onion thinly sliced
  • 4 tomatoes sliced
  • Tzatziki to serve
  • 4 pitas or flatbreads to serve

Instructions
 

  • Marinate the pork cubes in the refrigerator one day before cooking.
  • In a bowl, mix together the pork, oil, lemon zest and juice, oregano, cumin, paprika and garlic with plenty of seasoning. Refrigerate and leave to marinade for at least one hour.
  • Heat the grill to high. Thread the pork onto four metal skewers and put onto a baking tray. Grill for 3 to 4 minutes, then flip and repeat, until the pork is cooked through and charred in places.
  • Serve the skewers with shredded lettuce, thinly sliced onion and sliced tomatoes, tzatziki and pittas or flatbreads. Enjoy!
