Ingredients: 500 grams pork shoulder (cut into bite-sized cubes); 2 tbsp extra-virgin olive oil; 1 lemon (zested and juiced, plus extra to serve ); 1 tbsp dried oregano; 1 tsp ground cumin; 1 tsp smoked paprika; 4 garlic cloves (crushed); 2 heads Little Gem lettuce (shredded); 1 red onion (thinly sliced); 4 tomatoes (sliced); Tzatziki (to serve ); 4 pitas or flatbreads (to serve)

Note

Marinate the pork cubes in the refrigerator one day before cooking.

Keep calm and EAT TZATZIKI!

Directions

Step 1/3

In a bowl, mix together the pork, oil, lemon zest and juice, oregano, cumin, paprika and garlic with plenty of seasoning. Refrigerate and leave to marinade for at least one hour.

Step 2/3

Heat the grill to high. Thread the pork onto four metal skewers and put onto a baking tray. Grill for 3 to 4 minutes, then flip and repeat, until the pork is cooked through and charred in places.

Step 3/3

Serve the skewers with shredded lettuce, thinly sliced onion and sliced tomatoes, tzatziki and pittas or flatbreads. Enjoy!
