Tortang Talong

Ingredients
  

  • 2 tbsp vegetable oil
  • 6 garlic cloves
  • 1 onion
  • 2 tomatoes
  • 1 potato
  • 1 can luncheon meat
  • 6 eggs
  • 1.5 sachets MAGGI® Magic Sarap® 8g
  • 6 eggplants roasted
  • 0.5 cup vegetabe oil

Instructions
 

  • Sauté garlic, onion, tomato, potato and luncheon meat in oil for 15 minutes. Set aside to cool.
  • Beat eggs and add to the filling mixture. Season with remaining sachet of MAGGI® Magic Sarap®.
  • Season roasted eggplant with remaining ½ sachet of MAGGI® Magic Sarap®. Place egg mixture on top of the eggplant.
  • Fry for 2 minutes per side. Drain excess oil. Repeat with the rest of the Torta. Transfer on a serving plate and serve with preferred dipping sauce.
