Tortang Talong

- 2 tbsp vegetable oil
- 6 garlic cloves
- 1 onion
- 2 tomatoes
- 1 potato
- 1 can luncheon meat
- 6 eggs
- 1.5 sachets MAGGI® Magic Sarap® 8g
- 6 eggplants roasted
- 0.5 cup vegetabe oil
Sauté garlic, onion, tomato, potato and luncheon meat in oil for 15 minutes. Set aside to cool.
Beat eggs and add to the filling mixture. Season with remaining sachet of MAGGI® Magic Sarap®.
Season roasted eggplant with remaining ½ sachet of MAGGI® Magic Sarap®. Place egg mixture on top of the eggplant.
Fry for 2 minutes per side. Drain excess oil. Repeat with the rest of the Torta. Transfer on a serving plate and serve with preferred dipping sauce.
