Marinate the pork cubes in the refrigerator one day before cooking.

Directions
Step 1/3
In a bowl, mix together the pork, oil, lemon zest and juice, oregano, cumin, paprika and garlic with plenty of seasoning. Refrigerate and leave to marinade for at least one hour.
Step 2/3
Heat the grill to high. Thread the pork onto four metal skewers and put onto a baking tray. Grill for 3 to 4 minutes, then flip and repeat, until the pork is cooked through and charred in places.
Step 3/3
Serve the skewers with shredded lettuce, thinly sliced onion and sliced tomatoes, tzatziki and pittas or flatbreads. Enjoy!
