This is a thicker flan recipe. The final dessert is firm and creamy, not runny or jiggly.

Caramel Topping

Step 1/4
Melt 1 ½ cups of sugar in a saucepan over medium heat, stirring often so it does not scorch.
Step 2/4
Melt the sugar until fully dissolved and golden brown. If it's crystallized or bubbling, turn down the heat.

Pour the caramel into the dry, ungreased baking dish and set aside to cool.
Step 4/4
Use the wooden spoon or spatula to scrape the remaining caramel from the pan onto wax paper. Drizzle into fun shapes to create a decoration for the final dish.

Directions

Flan Filling

Step 1/6
Mix together 2 whole eggs, 10 egg yolks, vanilla extract, and condensed milk. Blend until smooth.
Step 2/6
Strain into the baking dish over the cooled caramel.
Step 3/6
Fill the larger dish with enough water to surround the baking dish fill level. Bake for 65 minutes at 350˚F.
Step 4/6
Remove the baking dish from the oven and the double boiler. Allow it to cool for ~15 minutes then place the dish on a trivet inside the refrigerator to chill. Chill overnight, or at least 5 hours.
Step 5/6
Flip the chilled dish onto the serving platter, and allow five to 10 minutes for the flan to drop.
Step 6/6
Lift the dish away and serve!
